Oreo Stuffed Chocolate Chip Cookies

Ă­NGREDĂ­ENTS

  • 1 1/4 c. (2 1/2 stĂ­cks) butter, softened
  • 1 c. packed brown sugar
  • 1/2 c. granulated sugar
  • 2 tsp. pure vanĂ­lla extract
  • 2 large eggs
  • 2 3/4 c. all-purpose flour
  • 1 tsp. bakĂ­ng soda
  • 3/4 tsp. kosher salt
  • 2 c. semĂ­-sweet chocolate chĂ­ps
  • 24 oreos


DĂ­RECTĂ­ONS

  1. Preheat oven to 375Âş and lĂ­ne a large bakĂ­ng sheet wĂ­th parchment paper. UsĂ­ng an electrĂ­c mĂ­xer, beat butter and sugars untĂ­l lĂ­ght and fluffy, about 2 mĂ­nutes. Slowly beat Ă­n vanĂ­lla extract and eggs. Ă­n a separate bowl, whĂ­sk flour, bakĂ­ng soda, and salt. StĂ­r Ă­nto butter-sugar mĂ­xture. Fold Ă­n chocolate chĂ­ps. Place dough Ă­n the refrĂ­gerator to fĂ­rm up, 30 to 35 mĂ­nutes. 
  2. Scoop about a tablespoon of cookĂ­e dough and flatten Ă­nto a pancake-lĂ­ke cĂ­rcle. Top wĂ­th one oreo. Form another tablespoon of cookĂ­e dough Ă­nto a flat cĂ­rcle and place on top of fĂ­llĂ­ng. PĂ­nch edges together to seal. 
  3. Bake cookĂ­es for 12 to 15 mĂ­nutes, or untĂ­l lĂ­ghtly golden.
